Farmhouse Cheddar Soup

This soup will freeze for three months, adding sherry and cream after freezing.

Delicate Mushroom and Leek Soup

Can be made the day before, cooled and then warmed through.

If freezing, do so befoore liqueur and cream are added.

Special Carrot and Orange Soup

Instead of cream I use Tip-Top which is less fattening (sic).

Wise men's lentil soup

Serve with a sprinkling of parsley. This soup will freeze.

Scottish Carrot Soup

This is a beautiful soup which can be served hot (or on warm days) very cold. Place soup bowls in fridge for a while before serving to ensure both are VERY cold.

To freeze, after sieving the soup, season and put into suitable containers and freeze. Remove when required, defrost, add cream and reheat.

Auld Alliance Soup

This is a nice soup to serve at a dinner party as the colour is beautiful. I like to use white stilton, but try the stilton with apricots for a change.

To freeze, before adding cream, season and put into suitable containers and freeze. Remove when required, defrost, add cream and reheat.

Eastern Lentil Soup

A good Winter warmer soup. Make while vegetables are at their cheapest and freeze in suitable containers, ready to take out in the cold weather.

Winter Velvet Soup

It was traditional for carol-singers to go up to "the big house" to sing their carols. They were rewarded with food, often soup, given to them at the back door by the servants of the house. This recipe, which is early Victorian, might have been one of the dishes served.

Carollers Soup

Turkey wasn't introduced to this country until the 16th century. Before then peacocks, swans and boars were used for the Christmas feasts. The following recipe is a great favourite in my family, using the remains of the turkey.

A meal in itself with crusty rolls, this will freeze.
