Starry Stilton Pies

Ingredients
Pastry
- 8oz plain flour
- 4oz lard and butter mixed
- pinch of salt
- about 3 ½ tablespoons of cold water
Filling
- 4oz stilton cheese, crumbled
- 1 medium leek, finely chopped
- 2 medium potatoes, chopped
- 1 medium onion, peeled and chopped
- salt and black pepper
- 2 tablespoons apple puree or 1 small apple, peeled and chopped
- egg or milk to glaze
Method
- Make up shortcrust pastry; wrap in cling film and chill for 30 minutes.
- Mix together cheese, onion, leek, potatoes, apple and season.
- Roll out the pastry and using a four and a quarter inch cutter, cut out 12 rounds. Use to line a 12 hole muffin tin.
- Use remainder of pastry to cut out 12 stars with a 2.5" star cutter and keep to one side.
- Divide cheese mixture between the tins and pack down well. Place a star on top.
- Brush stars with egg or milk and bake for 40-45 minutes at Gas 5, 180C, 375E until pastry is golden and filling feels tender.
- Remove from oven and allow to cool 10 minutes before transferring to wire tray.
Nice hot or cold - not suitable for freezing.
