Star Mince Pies

Ingredients

  • 8oz plain flour
  • 1 ½oz ground almonds
  • 6oz butter, chilled and diced
  • grated rind of lemon
  • mincemeat
  • 3oz icing sugar
  • 1 egg yolk
  • caster sugar to dredge

Method

  1. Sift together flour, icing sugar and ground almonds.
  2. Rub in diced butter until it resembles breadcrumbs. Add lemon rind.
  3. Stir in yolk of egg and add a little water if necessary, to form a dough.
  4. Roll out pastry on a floured board and use a 3.5" cutter to cut out bases for greased tart tins. Fill with mincemeat.
  5. Roll out the remaining pastry and use a star cutter to cut out lids. he mincemeat should be showing around the star edges.
  6. Bake for 30 mins in a pre-heated oven. Gas 4, 350C, 180E until pale golden. Cool, dredge with caster sugar and remove to wire trays.

Will freeze.
