Star Mince Pies

Ingredients
- 8oz plain flour
- 1 ½oz ground almonds
- 6oz butter, chilled and diced
- grated rind of lemon
- mincemeat
- 3oz icing sugar
- 1 egg yolk
- caster sugar to dredge
Method
- Sift together flour, icing sugar and ground almonds.
- Rub in diced butter until it resembles breadcrumbs. Add lemon rind.
- Stir in yolk of egg and add a little water if necessary, to form a dough.
- Roll out pastry on a floured board and use a 3.5" cutter to cut out bases for greased tart tins. Fill with mincemeat.
- Roll out the remaining pastry and use a star cutter to cut out lids. he mincemeat should be showing around the star edges.
- Bake for 30 mins in a pre-heated oven. Gas 4, 350C, 180E until pale golden. Cool, dredge with caster sugar and remove to wire trays.
Will freeze.
