Peach and Ham Salads

Ingredients
- 4-6 slices cooked Cumberland Ham (1 per person)
- 4-6 Peach halves (fresh or tinned)
- 1 tsp Curry Powder
- 2 tbsp Port Wine
- 1 tbsp Apricot Jam
- ¼ pt Double Cream
- Lettuce
- Watercress
Method
- Put curry powder, port and jam in small pan and heat until jam has melted. Strain and cool.
- Whip cream until thick and then stir in cooled curry mixture.
- Place lettuce leaves on plate and then ham. Arrange drained peaches cut-side down on top of ham.
- Coat peaches with sauce and chill.
Serve with brown bread and butter.
