Mocha Rum Cups

Ingredients
- 6oz good make plain Chocolate
- ½oz Butter
- 3 large Eggs, separated
- 1 tbsp Rum
- 1 tbsp Coffee Essence
- ¼ pt Double Cream, whipped
- Chocolate to decorate
Method
- Break chocolate into basin with butter and melt over hot water.
- Remove from heat and beat in egg yolks.
- Add rum and then coffee essence.
- Whisk whites until stiff and then fold into mixture. Pour into small pots and leave to set.
- Put a swirl fo cream into each put and decorate with chocolate.
