Mincemeat, Apple and Almond Pudding

Ingredients
Filling
- 12oz prepared cooking apple
- 3oz soft brown sugar
- 1 tbsp water
- 8oz mincemeat
Topping
- 4oz soft margarine
- 4oz ground almonds
- 2 well beaten eggs
- 4oz soft brown sugar
- ½oz flaked almonds
Method
- Slice apples and put in pan with the water and sugar and cook until soft, or cook 5 minutes on high in the microwave.
- Add mincemeat to apple and turn into ovenproof dish
- Beat together margarine, sugar, ground almonds and eggs until a smooth mixture is formed. Spread over apple mixture and sprinkle on the flaked almonds.
- Bake in pre-headed oven Gas 4, 350E, 180C until firm to the touch and pale golden (about 35-40 minutes)
- Serve with warm cream
Will freeze - nice warmed up.
