Mincemeat and Marzipan Tea Bread

Ingredients
- 8oz self-raising flour
- 4oz cold butter, cut into dice
- 3oz light brown sugar
- 3oz white marzipan, cut into dice
- 2 well-beaten eggs
- Approximately 2 fl oz milk
- 10 oz mincemeat
- 2 tbsp flaked almonds
Method
- Rub butter into flour until like fine breadcrumbs. Add sugar.
- Add diced marzipan to flour.
- Beat eggs and milk together.
- Add mincemeat to milk mixture, stir into the flour and mix well.
- Divide mixture between 2 x 1 lb loaf tins. Smooth tops and sprinkle on the almonds.
- Place in a pre-heated oven 180°c, Gas 4, 160°c fan for 1 hour.
- Test with skewer to see if cooked right through. If not, return to oven for 10 minutes.
- Dust with icing sugar whilst still hot if desired.
