Midsummer Fruit Salad

Ingredients
- Rind and juice of Lemon
- ¼pt cold Water
- ¼pt sweet White Wine
- 3oz Caster Sugar
- 1 Galia Melon, cubed
- 2 Kiwi Fruit
- 1 Paw Paw or Mango
- 8oz Strawberries, halved
- 4oz Black Grapes, seeded and halved
Method
- Put water, sugar, rind and juice of lemon into a small pan and heat until sugar dissolves. Add wine and cool.
- Cut melon into cubes or balls and place in a large glass dish.
- Slice kiwis and add, with halved strawberries and grapes.
- Remove peel and seeds from paw paw and dice flesh. Add to pan.
- Pour cold syrup over fruit and leave to chill.
Serve with single cream.
