Mandarin and Kiwi Cheesecake
There are lots of recipes for cheesecakes and I have tried most. This simple one is a great favourite with my friends and especially the girls in my husband's office who sample it each Christmas.
Ingredients
Base
- 3oz Butter
- 8oz Chocolate Digestives, crushed
- 1tbsp Sugar
Top
- 8oz Cream Cheese
- 3oz Caster Sugar
- 2 Large Eggs, seperated
- 1 x 11oz can of Mandarin Oranges
- 1 Orange Jelly
- 5floz Orange Yoghurt
- 5floz Double Cream
To Decorate
- 1 Kiwi fruit
- 5floz Double Cream
- reserved Oranges
Method
- Melt butter, add sugar and crushed biscuits. Mix well and press into an 8 or 9 inch springform cheesecake tin. Leave to set.
- Beat cream cheese and 3oz Caster Sugar together with egg yolks. Add orange yoghurt.
- Drain oranges and dissolve jelly in 3tbsp of the juice. Leave to cool.
- Reserve 1 or 2 mandarins to decorate and chop the rest.
- Whip cream until thick but not stiff. Beat egg whites until stiff.
- Add cooled jelly to cheese mixture, fold in cream and the whites. Leave to thicken slightly.
- Fold in oranges, pour on to biscuit base and leave to set.
- Decorate with slices of kiwi, reserved mandarins and double cream piped around the edge in rosettes.
