Lemon Biscuits

Ingredients

  • 4oz butter
  • 2oz caster sugar
  • rind of a large lemon
  • Few drops of vanilla or lemon essence
  • 5oz self-raising flour
  • Caster sugar to sprinkle

Method

  1. Mix all together in mixer or large basin.
  2. Roll into small balls and place on greased trays. Flatten down with prongs of fork.
  3. Bake for 15-20 minutes at Gas 5, Elec 350°, until pale golden.
  4. Sprinkle with caster sugar and store.
