Lemon Biscuits

Ingredients
- 4oz butter
- 2oz caster sugar
- rind of a large lemon
- Few drops of vanilla or lemon essence
- 5oz self-raising flour
- Caster sugar to sprinkle
Method
- Mix all together in mixer or large basin.
- Roll into small balls and place on greased trays. Flatten down with prongs of fork.
- Bake for 15-20 minutes at Gas 5, Elec 350°, until pale golden.
- Sprinkle with caster sugar and store.
