Lamb Steaks in Piquant Sauce

Ingredients

  • 4 lamb steaks from leg
  • 2oz butter
  • 1 large onion, chopped
  • 1 clove garlic
  • ½ oz flour (1 tablespoon)
  • 14oz can tomatoes
  • 1 tbsp tomato puree
  • 1 tbsp brown sugar
  • ¼ tsp paprika
  • 3 tbsp vinegar
  • Salt and pepper

Method

  1. Place butter in a small pan and fry onion and garlic for 5 minutes until golden brown.
  2. Stir in flour and cook for a minute. Add tomatoes, puree, sugar, paprika and vinegar, and cook together for3-4 minutes.
  3. Taste and adjust seasoning.
  4. Lay lamb in shallow ovenproof dish, and pour over sauce. Cover and bake for 3/4 hour to 1 hour until lamb is tender, at Gas 4, Elec 350°.

To freeze: Cool quickly, cover and label. Thaw at room temperature for about 6 hours or overnight. Reheat at Gas 4, Elec 350° for 45 minutes.
