Honey-Glazed Chops with Apricot Sauce

Ingredients
- 2oz "no need to soak" Apricots
- 2oz Raisins
- ¼pt Cider or Cider vinegar
- ¼pt Apple Juice
- 1-2 tbsp Brown Sugar
- 1 tspn Worcestershire Sauce
- 4 Pork Chops
- 1oz Butter
- 1 tbsp Clear Honey
- 1 level tspn French made Mustard
Method
- Put the apricots, raisins, cider or vinegar, apple juice, brown sugar and Worcestershire sauce together in a small pan. Bring to boil, then turn down heat and simmer for about 20 minutes.
- Trim chops if necessary. Place in heatproof dish or on foil-lined grill.
- Melt butter and stir in honey and mustard. Brush over the chops. Cover with foil and cook for 30 minutes at 190C.
- Grill gently for about 10 minutes each side, depending on thickness of chop. Brush with a little glaze during grilling.
- Place chops in a dish. Pour sauce over the top and grill gently to reheat if necessary.
Serve with pasta.
