Fresh Raspberry Slices

Ingredients
- 8oz shortcrust pastry
- 3 tbsp raspberry jam
- 5oz fresh raspberries
- 3oz soft butter
- 3oz caster sugar
- 3oz ground almonds
- 3oz ground rice
- 1 tsp baking powder
- 2 medium eggs
- 2 tbsp toasted flaked almonds
Method
- Preheat the oven to 190°c, 375°F, gas 5.
- Grease a 7" square tin and line with pastry.
- Spread jam over base and top with raspberries.
- Beat together the butter and sugar until soft and creamy. Add the beaten eggs and then the ground almonds, ground rice, and baking powder.
- Beat well and then spread the mixture over the raspberries. Sprinkle the almonds over the top.
- Bake for 20-25 minutes until pale golden. Cool and cut into slices.
