Cumberland Tea Cakes

Ingredients

  • 1lb strong plain flour
  • 2oz lard
  • 1oz echo
  • 1oz yeast
  • 1 tsp salt
  • 1 ½oz currants
  • 1oz sugar
  • ¼ pt milk
  • ¼ pt water (warm)

Method

  1. Sieve flour and salt together
  2. Run in the fat and add sugar and fruit
  3. Disperse yeast in warm liquid
  4. Add liquid to flour and knead to a smooth and clean dough
  5. Put in warm place to rise until doubled in size
  6. Scale into 3oz pieces and mould into rounds. Roll out with rolling pin slightly and place on greased trays.
  7. Prove until doubled in size and bake for 15 minutes at 200C.
