Ingredients
- 1lb strong plain flour
- 2oz lard
- 1oz echo
- 1oz yeast
- 1 tsp salt
- 1 ½oz currants
- 1oz sugar
- ¼ pt milk
- ¼ pt water (warm)
Method
- Sieve flour and salt together
- Run in the fat and add sugar and fruit
- Disperse yeast in warm liquid
- Add liquid to flour and knead to a smooth and clean dough
- Put in warm place to rise until doubled in size
- Scale into 3oz pieces and mould into rounds. Roll out with rolling pin slightly and place on greased trays.
- Prove until doubled in size and bake for 15 minutes at 200C.
