Cumberland Sausage with Spicy Sauce

Ingredients
- 1-1 ½ lbs thick Cumberland sausage, in one piece
- 1oz butter
- 1 clove garlic
- 1 finely chopped onion
- 2 tablespoons wine vinegar
- ¼ pint light stock
- 1 tablespoon Cumberland mustard with peppercorns
- 2 tablespoons demerara sugar
- 1 slice lemon
- 1 bay leaf
- Salt
- Pinch of cayenne pepper
- 2 tablespoons Worcestershire sauce
- 6 tablespoons tomato sauce
- 2 tablespoons tomato puree
Method
- Grill or cook in oven the sausages, circled round into a baking dish. Drain off any fat and keep warm in oven.
- Melt butter and cook onion and garlic until soft.
- Add vinegar, stock, mustard, lemon slice, sugar, bay leaf, and cayenne pepper. Bring slowly to boil, lower heat, and simmer for 15 minutes.
- Add tomato sauce, puree, Worcestershire sauce, and seasoning. Simmer a further 10 minutes. Remove lemon slice and bay leaf. Serve with sausage.
