Crunchy Salad
Ingredients
- 4oz red Cabbage, shredded
- 4oz Carrots, coarsely grated
- 4oz thinly sliced Courgettes
- 4oz Bean Sprouts
- 4oz Roasted Peanuts
- 4 tbsp Lemon Juice
- 4tbsp Walnut or Olive Oil
- ½ tsp French Mustard
- Salt and Pepper
Method
- Mix all vegetables in a large bowl.
- Shake together lemon juice, oil, mustard and salt & pepper to taste.
- Pour over vegetables and mix well.
- Add nuts before serving and fork in.
