Crumpets

Ingredients
- 8oz Strong Plain Flour
- 1tsp Salt
- 1 tbsp Dried Yeast
- 1 tsp Caster Sugar
- ½ pt Milk
- 2 floz Water
- Lard to grease
Method
- Heat milk and water together in small pan until hand-hot.
- Pour into a jug, stir in sugar and dried yeast and leave in a warm place for 10-15 minutes until it has a good frothy head.
- Sift flour and salt into a mixing bowl, make a well in the centre and pour in the frothy mixture. Use a wooden spoon to add the flour gradually into the liquid.
- Beat well at the end to a perfectly smooth batter. Cover with a tea towel and leave in a warm place for around 45 minutes.
- Grease pan and rings well and place over a medium heat until pan is hot. Spoon one tablespoon of batter into each ring.
- Let them cook for 5-6 minutes. Tiny bubbles will appear and suddenly burst. Lift off the rings with spoon and fork turn crumpets over to cook other side for 1 minute. Keep between tea towel to cool.
