Cold Curried Prawns

Ingredients

  • 8oz prawns
  • 1 tbsp oil
  • 1 small onion, chopped
  • 1 level tbsp curry powder
  • 1 rounded tsp tomato puree
  • 4 tbsp water
  • 2 tbsp mango chutney or apricot jam
  • ΒΌ pint mayonnaise
  • 3 tbsp single cream
  • Juice of half a lemon
  • 8oz long grain rice
  • 4 tbsp French dressing
  • Peas, sweetcorn etc if desired

Method

  1. Soften the onion in oil for a few minutes, but do not brown. Stir in curry powder and cook.
  2. Stir in the tomato paste, diluted with water, and then chutney or jam. Bring to a simmer and cook with lid on for 5 minutes. Allow to cool.
  3. Strain into a basin, add mayonnaise and mix well, and then add cream and lemon juice, and finally prawns.
  4. Boil rice until tender, drain and toss in French dressing, then add any cooked veg, cucumber, tomatoes etc for colour if desired.
  5. Form into a ring and place prawn curry in centre. Decorate with lemon wedges.
