Cold Curried Prawns

Ingredients
- 8oz prawns
- 1 tbsp oil
- 1 small onion, chopped
- 1 level tbsp curry powder
- 1 rounded tsp tomato puree
- 4 tbsp water
- 2 tbsp mango chutney or apricot jam
- ΒΌ pint mayonnaise
- 3 tbsp single cream
- Juice of half a lemon
- 8oz long grain rice
- 4 tbsp French dressing
- Peas, sweetcorn etc if desired
Method
- Soften the onion in oil for a few minutes, but do not brown. Stir in curry powder and cook.
- Stir in the tomato paste, diluted with water, and then chutney or jam. Bring to a simmer and cook with lid on for 5 minutes. Allow to cool.
- Strain into a basin, add mayonnaise and mix well, and then add cream and lemon juice, and finally prawns.
- Boil rice until tender, drain and toss in French dressing, then add any cooked veg, cucumber, tomatoes etc for colour if desired.
- Form into a ring and place prawn curry in centre. Decorate with lemon wedges.
