Christmas Mincemeat Slices

Ingredients
- 9oz unbleached white flour
- 1oz ground almonds
- 6oz butter
- 3oz caster sugar
- Grated rind of half a lemon
- 2tbsp single cream
- 1 egg yolk
- 1 egg white
- 1lb Mincemeat
- 2tbsp Apricot Jam
- 2tbsp Brandy or Rum
- 1oz Ground Almonds
Method
- Rub the fat into the flour, almonds and sugar until breadcrumbs
- Rise to a dough with the cream, lemon rind and yolk
- Divide into two and wrap in foil or film and chill for 1 hour
- After chilling roll one portion of pastry to fill a tin 12 x 8 x 3/4 (swiss roll tin). Cover with mincemeat, apricot jam, brandy or rum and ground almonds mixed together.
- Roll out second portion of pastry and cover the filling. Whisk an egg white until frothy and paint the pastry, sprinkle with sugar.
- Bake in a pre-heated oven 190C for 45 minutes or until golden brown.
This slice can be served hot or cold, cut into portions with cream or on its own.
