Cardinal Salad

Ingredients
- 6oz shredded Red Cabbage
- 2oz seedless Raisins
- 4oz diced cooked Beetroot
- Large Orange
- 2 tbsp Vinegar
- 1-2 tbsp Oil
- 2 level tsp Caster Sugar
Method
- Put oil, vinegar, sugar and orange rind in screw-topped jar and shake.
- Place shredded cabbage, raisins, diced beetroot and segments of orange in bowl and toss in dressing.
Nice to serve with ham and pork.
